Slow Cooker Chicken and Sweet Potatoes

With no good sales this week, I am digging in my pantry to make dinner this week:


Slow Cooker Chicken & Sweet Potato Stew
Ingredients:
2 lbs. chicken
2 lbs sweet potatoes, peeled and cut into spears
1/2 lb white button mushrooms, thinly sliced
6 large shallots, peeled and halved
4 cloves garlic, peeled
1 cup dry white wine
2 tsp chopped fresh rosemary, or 1/2 teaspoon dried rosemary, crushed
1 tsp salt
1/2 tsp freshly ground pepper
1 1/2 Tbs white-wine vinegar

Directions:
1. Place chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper in a 6-quart slow cooker; stir to combine. Put the lid on and cook on low until the potatoes are tender, about 5 hours. Before serving, remove bones from the chicken, if desired, and stir in vinegar.

Sounds good! I don't think I've ever had something like that before, but I am for sure going to try it!

As far as the sales go -- what's up with that? I noticed no good deals around here either -- not even with the New Year Holiday. I was a little disappointed to say the least.

I wanted to try this once before but my husband doesn't love sweet potatoes like me. Sounds great though!
