Look What I Made

Happy Friday Followers!

Isn't it pretty? My wonderful mother-in-law spent an afternoon helping me put this together. We even attached shelf liners on the bottom for grip. That way, we didn't need to put on strings so, they look more like dining room chairs than kitchen chairs. A really clever trick:-)

I am so proud of myself because although my email address is sewing@wi.rr.com, I don't sew:-) She was very patient with her remedial student and, I am going back on Thrursday to sew the other five:-) Wish me luck!

They are only going to cost me $20 total for all 6!! Normally, 4 would cost over $100!! With the money I saved, I need to get table linens to go with it:-) Or, I could get some new home supplies but maybe I will just celebrate with a cheese and wine party .

What do you guys think I should do?

FNCCC Week 33

My Wordless Wednesday at 5 Minutes for Mom is going to be more like Wordful Wednesday on SevEn cLoWn CirCus:-).

I am also playing along with I Blame My Mother on her The Food Network Chefs Cooking Challenge (FNCCC). This week the chef of choice is Sandra Lee. I am doing her Chicken Strip Wrap with Sweet Mustard. I posted the recipe on Monday and here is what it looked like:


The Verdict: We really enjoyed the sweet mustard however, the chicken had waaaaaay too much poultry season on it. I would make it again with just a teaspoon...not a tablespoon.

Tackling Cheese Cupcakes

It's time for Tackle It Tuesday with 5 Minutes for Mom . This week, I tackled another Iron Cupcake: Milwaukee Challenge and this time it was Cheese!! Well, I couldn't pass up a chance to showcase my famous Chocolate Cheesecake and here they are:

I made chocolate cheesecake cupcakes with a chocolate truffle snuggled in the center of chocolate candy clay to make Brown-Eyed Susan flowers. I added the flowers to a window box to make:


Can you believe that people actually thought that I was Suzy from Suzy's Cheesecake? Too funny!!! Here I am in all my presentation glory:

I don't know if you can make it out but, the score board says, I WON!! First for presentation and second for taste:-) Yeah Me!! What a fun event!

Chicken Strip Wrap with Sweet Mustard


I am doing more menu planning with I'm an Organizing Junkie and finding more deals at Pick N Save for $5 Dinners and putting them together with great recipes:-)

Can you believe I am getting a break this week? All I have going on is a doctor's appointment for my mom and more sewing with my MiL! This week is so slow I may slip into a coma:-)

Thank goodness that Pick N Save is helping me out with my menu planning. They have Chicken Breasts on sale for $2.99/lb. (normally $4.79/lb.) !! That helps because...

In addition, I am still playing along with I Blame My Mother on The Food Network Chefs Cooking Challenge (FNCCC). This week, the chef of choice is Sandra Lee. Chicken Strip Wrap with Sweet Mustard
Ingredients:
1 lb. chicken breast
1 egg
2 Tbs water
1/4 cup all-purpose flour
1 Tbs poultry seasoning
Salt and freshly ground black pepper
1 cup panko bread crumbs
4 whole-wheat flour tortillas
1/2 cup shredded Cheddar
1/4 head iceberg lettuce, shredded
1 pickle, diced

For the Sweet Mustard:
1/4 cup spicy brown mustard
2 Tbs mayonnaise
1 Tbs packed brown sugar

Directions:
1. Preheat oven to 350 degrees F.

2. Whisk the egg and 2 tablespoons water in a bowl and set aside. Mix the flour, poultry seasoning and salt and pepper, to taste, in a resealable plastic bag. Add the chicken strips and toss to coat, set aside. Put the bread crumbs in a shallow dish or pie plate. Remove the chicken from the bag and shake off the excess flour. Coat the chicken in the egg, than dredge in the panko bread crumbs. Arrange the strips in a single layer, on a baking sheet, allowing space in between each strip.

3. Bake for 15 to 20 minutes, until chicken is golden brown and cooked through.

4. For the Sweet Mustard sauce: In a small bowl, combine the mustard, mayonnaise and the brown sugar. Mix until sugar dissolves completely.

5. Warm the tortillas in a microwave for 30 seconds to make them pliable. Lay a tortilla flat onto a work surface. Place about 5 chicken strips onto the tortilla. Drizzle with the sweet mustard sauce and top with cheese, lettuce and pickle. Roll up the tortilla and put on a serving platter. Repeat with remaining ingredients and serve.

FNCCC Week 32

The Verdict: The flavors were good. We would have it again but it was a little dry without condiments (i.e. sour cream, guac, etc.).

Chicken and Black Bean Enchiladas with Gooey Jack Cheese


I am doing more menu planning with I'm an Organizing Junkie and finding more deals at Pick N Save for $5 Dinners and putting them together with great recipes:-)

Is it summer yet? I am just swamped until the end of the school year! I have one daughter off school and the other who needs to go back to college. I am learning to sew some chair cushions with my MiL and cookies to deliver for Teacher's Appreciation Day. AND, I have a doctor's appointment to take my mom to along with an Earth Day Party and volunteering. Not to mention that I have to prepare for the big Iron Cupcake: Milwaukee Cheese Challenge on Sunday. Whew!! I am exhausted already!

Thank goodness that Pick N Save is helping me out with my menu planning. They have Split Chicken Breasts on sale for $.99/lb. (normally $2.89/lb.) !! That helps because...

In addition, I am still playing along with I Blame My Mother on The Food Network Chefs Cooking Challenge (FNCCC). This week, the chef of choice is Robin Miller. I had a hard time finding something of hers to make. She doesn't have very good reviews however, I am making her Chicken and Black Bean Enchiladas with Gooey Jack Cheese. Chicken and Black Bean Enchiladas with Gooey Jack Cheese
Ingredients:
1 tsp olive oil
1/4 cup chopped onion
1 cloves garlic, minced
1 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 (15-ounce) can black beans, rinsed and drained
1 (4-ounce) can diced green chiles
1/3 cup prepared salsa, mild, medium or hot
2 Tbs chopped fresh cilantro leaves
4 (8-inch) flour tortillas
1 1/3 cups shredded Monterey jack and or Cheddar

Directions:
1. Preheat oven to 400 degrees F.

2. Heat oil in a large skillet over medium heat. Add onion and garlic and saute 2 minutes. Add chicken and saute 5 minutes, until golden brown and cooked through. Remove half of the chicken and reserve for another use.

3. Stir in black beans, green chiles, and salsa and simmer 5 minutes, until sauce thickens and reduces. Remove from heat and stir in cilantro.

4. Arrange 4 tortillas on a flat surface. Top each tortilla with an equal amount of chicken mixture. Roll up tortillas and place side by side in a shallow baking dish. Top tortillas with shredded cheese (1/3 cup per tortilla).

5. Bake enchiladas 15 minutes, until cheese is golden and gooey!

Summer Day Camp Here We Come!

Happy Friday Followers! I am so excited that the weather has finally taken a turn for the better!! It means that summer is right around the corner.

With summer comes day camp and this year, I am leading a unit:-) Yahoo!! It started off with 5 of my Daisies and somehow, I picked up 6 more along the way! I had such a great experience with camp as a girl and I am so glad that I can contribute to theirs.

So, any advice out there for a first-time unit leader? I need all the help I can get:-)

FNCCC Week 31

The Verdict: It was VERY flavorful...unfortunately, they weren't flavors that we liked. It was too spicy for us. And they consistency was more like taco meet than chili. Sorry Robert, we couldn't finish this one:-(

Tackling Spring Cleaning

It's time for Tackle It Tuesday with 5 Minutes for Mom . I can't believe that April is half over! I have been spring cleaning like a mad woman!! The painting project gave me the inspiration and the vacation gave the energy:-) Here is what I accomplished thus far:

  • Deep clean living room carpets

  • Organize daughter's craft table

  • Organize daughter's room

  • Launder bed linens

  • Flip Mattresses

  • Wash walls in bathroom

  • Launder bathroom linens

  • Clean Coffe Pot

  • Clean Oven

And now, I am exhausted!! But, I have just enough energy to show you the Taj Mahal of Barbie Closets:


Once the living room was painted, the Barbie Village needed to be relocated. We did some purging and came up with some space in her closet. Now, Barbie has a party house with a roof-top pool and a second story that is a garage/accesory room...that's right room. And the landing in between is the paper-clip float in closet. That's right...those babies are hanging there with paper clips. I am a McGyver Mommy! It will probably look like this for 2.5 seconds but it gave me great pleasure:-)

And now, I am going over to SITs for a Spring Fling:-)

Santa Fe Hot and Spicy Chili

Back to life...back to reality! We had a GREAT spring break but now, things are back in the swing. I have a Girl Scout Meeting and Service Area Meeting, a PTO meeting and volunteering three times. Whew!! I am exhausted already!

Santa Fe Hot and Spicy Chili
Ingredients:
3 Tbs vegetable oil
1 large onion, chopped small
2 tsp chopped garlic
1 lb Italian sausage, casing removed
1 lb ground beef
2 tsp ground cumin
2 tsp chili powder
2 tsp salt
2 tsp black pepper
2 (16-ounce) cans diced tomatoes

Directions:
Heat oil in a skillet and saute onions until translucent. Add garlic and saute until it begins to turn golden brown, being careful not to burn it. Add sausage and ground beef and cook until the meats are brown. Drain off any fat. Season with cumin, chili powder, salt, and pepper. Add beans and tomatoes and simmer 30 minutes.

FNCCC Week 30

I am also playing along with I Blame My Mother on her The Food Network Chefs Cooking Challenge (FNCCC). This week the chef of choice is Rachael Ray. I am doing her Spring Chicken Roll-Ups with Lemon Dijon Pan Sauce. I posted the recipe on Monday and here is what it looked like:


The Verdict: I used broccoli instead of asparagus, mozzarella instead of provolone and ham instead of prosciutto. So basically, I was using the recipe for the method. And it turned out AWESOME!! The chicken was juicy and the sauce was flavorful. You could mix this up a thousand ways and get great results every time! Thanks for making it easy Rachael:-)

Tackling a Vacation

It's time for Tackle It Tuesday with 5 Minutes for Mom . We tackled a FABULOUS weekend!! We traveled 4 hours north with a couple of friends to Harris, MI to stay at The Island Resort and Casino. It was AWESOME! The drive didn't seem like 4 hours because the company was so comfortable. The rooms were clean, the tables were entertaining and the slots were fun. We gambled to our hearts content, relaxed in the pool and tried new things. It was an all around great time:-)

It was an really good deal. We paid $65 on Thursday and $85 on Friday. For that price, we had a really comfortable and tidy room. We also got 2 free drinks, 2 $5.oo coupons for meals and $10 in cash to gamble with. We used every one of them!! We also took advantage of their player's card that offered discounts and points towards stuff in the gift shop. Check out this little number that I picked up with my points:

Isn't this cute? It is a beautiful bag made of recycled ties, belts, belt buckles and jewelry....a one-of-a-kind:-) I love that it is so bohemian and green:-) The trip was worth it just for this purse alone:-)

Spring Chicken Roll-Ups with Lemon Dijon Pan Sauce

I hope everyone had a great Easter! We did. Our vacation was very relaxing and we had an awesome time with great company. We even snuck in some family time:-) And what's even better, my youngest is off ALL week!! Yahoo! It's going to a little summer preview:-)

Spring Chicken Roll-Ups with Lemon Dijon Pan Sauce
Ingredients:
1 lb. boneless, skinless chicken breast
Salt and freshly ground black pepper
4 oz Mozzarella cheese
4 oz Ham
1 cups broccoli florets
1 Tbs extra-virgin olive oil
2 Tbs butter
2 Tbs all-purpose flour
1 cup chicken stock or vegetable stock
1 Tbs Dijon mustard
1/2 lemon, zested and juiced
1/4 cup chopped, flat-leaf parsley, a handful

Directions:
1. Halve the chicken breasts horizontally separating each into 2 cutlets.

2. Place each halved cutlet in an individual freezer plastic storage bag (with slider tab). Add a tablespoon of water to each bag and pound into1/8-inch thick cutlets.

3. Arrange the 4 cutlets on work surface. Season cutlets with salt and pepper on the side facing up. Cover each piece of chicken with 1 slice cheese and 1 slice ham. Starting on 1 side of the breast, place a small bundle of 3 asparagus spears. Wrap and roll the chicken around the asparagus. Wash hands.

4. Heat about 1 tablespoon extra-virgin olive oil, a turn of the pan, in a nonstick skillet over medium heat. When hot, using tongs, add the chicken roll-ups to skillet with seam side down. Season the roll-ups with salt and pepper. Cover the pan loosely with tin foil and cook 4 to 5 minutes, turn roll-ups over and cook and other 4 to 5 minutes. Remove cooked roll ups to a serving plate. Add 2 tablespoons of butter and 2 tablespoons flour Stir in the chicken stock and Dijon mustard, scraping up any drippings from the bottom of the pan, and simmer 1 minute. Remove from the heat, add the lemon zest, lemon juice and parsley and spoon over chicken.

April is Party Time!!

Hey Friday Followers, you picked a great time to stop by and follow me here! There is all kinds of partying going on in April. Painting Recap

No gardening last week because of the painting. So, I thought I would take this opportunity to do a run-down of the project. Here is what we did:

3/14/10: We preshopped for the project. We priced out the paint and other things we needed. Also I bought new picture frames for the picture wall and the border. Daily total: $82.45.

3/15/10: We used our credit card rewards to buy more painting supplies. Daily total: $0.00.

3.17/10: We used the rest of our rewards to buy all the primer and the paint: Daily total: $ 122.27.

3/19/10: I bought some more picture frames. Daily Total: $13.13.

3/20/10: We bought a light fixtures, new outlet overs and some electrical supplies. We also rented the scaffold, washed walls and patched cracks. Daily Total: $130.74.

3/21/10: We sanded the repairs and did the final wash down of the walls. Daily Total: $0.00

3/22/10: We primed the walls. Daily Total: $5.85.

3/23/10: We started putting the color on the walls. Daily Total: $ 0.00.

3/24/10: We continued painting and did the faux. Twice:-( We also bought the floating shelves and hung them. We got the twine for the picture wall and the materials we needed to custom frame the windows. Daily Total: $ 147.24.

3/25/10: I finished the faux finish and starting on a full spring cleaning of the room. I vaccuumed, washed the fireplace, the woodwork and the windows. Daily Total: $28.70.

3/26/10: We cleaned the living room carpet and bought more hardware for the custom frame. Daily Total: $77.37.

3/27/10: We put the room back together. We also took back the scaffold and the carpet cleaner. Daily Total: $44.14.

3/28/10: We hung pictures and filled the bookshelves. Daily Total: $25.00.

So there you have it: 13 days/2 people/$676.89. Not bad!!

Now, we still need to custom frame some eagle prints that are going to run us a couple hundred dollars but, that is still redoing a dining room, a living room and a hallway for under $1000.00. Heck, I should be on one of those redecorae on a budget shows on HGTV:-)
